I run a business (Backyard Bounty) making preserves from home-grown produce, and a big part of the success of the business is taking a wide and sometimes unpredictable range of ingredients and making them into a saleable product. As a result, I have developed a broad and practical understanding of the basic principles of preserving, and how to mix and match flavours to show off beautifully fresh ingredients in their best light. I am also a fully qualified teacher with almost 10 years experience in the classroom, and look forward to putting these two sets of skills together in these courses.
